What Is EZ Water? The Missing Piece of Human Health

Most people think staying hydrated is simply a matter of drinking enough water. While hydration certainly begins there, the most important water in your body is not the water in your glass. It is the structured water surrounding every cell, protein, enzyme, hormone, and strand of DNA. This remarkable form of water, known as EZ water, may be one of the most overlooked foundations of human health.
If you have spent any time learning from me, you have probably heard me talk about EZ water.
In fact, it is one of the topics I am asked about most often.
I believe it is one of the most important concepts to understand because it provides a unifying way of looking at health. Whether someone struggles with fatigue, chronic inflammation, poor circulation, brain fog, connective tissue problems, hormone imbalances, or digestive issues, I find myself coming back to the same question:
How healthy is the water inside their body?
That may sound like an odd question.
After all, we have been taught that water is simply...water.
Drink enough of it, avoid dehydration, and you have checked the hydration box.
But that view dramatically oversimplifies what is happening inside your body.
The water inside your tissues behaves very differently than the water sitting in a bottle on your desk. Understanding that difference completely changes how we think about hydration, energy production, inflammation, detoxification, and even the role of sunlight in human health.
Before we can understand why EZ water matters, we first need to understand what it actually is.
Most Of The Water In Your Body Is Not Liquid Water
We have all heard that the human body is roughly 60 to 70 percent water.
That statistic is true, but I actually find another statistic much more fascinating.
If you were able to count every molecule inside your body, approximately 99 out of every 100 molecules would be water.
Think about that for a moment.
When we talk about optimizing health, we spend enormous amounts of time discussing proteins, carbohydrates, fats, vitamins, hormones, neurotransmitters, genes, and supplements.
Yet almost every one of those molecules exists surrounded by water.
Proteins are surrounded by water.
DNA is surrounded by water.
Your mitochondria are surrounded by water.
Hormones, enzymes, receptors, cell membranes, connective tissue, and even the spaces between your cells are filled with water.
Water is not simply something your body contains. It is the environment in which virtually every biological process occurs.
That realization alone should make us ask a different question.
If nearly everything happening inside your body depends on water, shouldn't we understand the kind of water that actually exists there?
The Fourth Phase Of Water
Most of us were taught in elementary school that water exists in three forms.
Liquid.
Solid.
Gas.
That is where the lesson ended.
But inside your body, water behaves differently.
Scientists now recognize a fourth phase of water that forms whenever ordinary liquid water comes into contact with hydrophilic, or water-loving, surfaces. Dr. Gerald Pollack, one of the leading researchers in this field, named this form Exclusion Zone Water, or EZ water, because it creates a zone that excludes particles and molecules larger than electrons from entering it.
You may also hear it called:
- Structured water
- Fourth-phase water
- Biological water
- Interfacial water
- Coherent water
Although these terms are not always perfectly interchangeable in the scientific literature, they generally describe the same remarkable phenomenon.
Unlike liquid water, which is constantly moving in a random arrangement, EZ water organizes itself into an orderly structure.
That organization changes everything.
Instead of behaving like the water you pour into a glass, it begins behaving more like a liquid crystal.
There is a reason that might sound familiar.
Liquid crystals are used in advanced technologies because they can store information, conduct energy, and respond to electromagnetic signals.
As remarkable as that is, your body has been using liquid crystalline water all along.
This is one of the reasons I often describe the human body as a battery made out of water that is charged by sunlight.
It is a simple phrase, but it captures an incredibly profound reality.
Why Structure Matters
Imagine two crowds of people.
The first crowd is leaving a concert. Everyone is walking in different directions, bumping into each other, changing course randomly, and creating chaos.
That is similar to liquid water.
Now picture a military parade. Everyone is moving together in an organized formation. The individuals are still moving, but they are moving with purpose and coordination.
That is much closer to what happens in EZ water.
The molecules become highly organized while still maintaining the ability to move. That organized structure gives EZ water properties that ordinary liquid water simply does not have.
It develops a negative electrical charge.
It stores potential energy.
It helps organize proteins.
It facilitates communication throughout the body.
It creates a protective environment around cells.
And it becomes one of the body's primary ways of storing and moving energy.
Those are extraordinary claims.
The exciting part is that they begin explaining observations that have puzzled scientists for decades.
How can billions of cellular reactions occur every second with such remarkable coordination?
How do cells communicate so quickly?
How does the body organize itself so efficiently?
Increasingly, researchers are realizing that water is not just participating in those processes.
It is helping orchestrate them.
EZ Water Is Everywhere
One of the biggest misconceptions is that EZ water exists only in certain parts of the body.
In reality, it is nearly everywhere.
It surrounds your proteins.
It lines your cell membranes.
It fills your connective tissue.
It forms around collagen.
It surrounds your mitochondria.
It exists throughout your extracellular matrix.
It even plays important roles in your blood vessels and lymphatic system.
In other words, EZ water is not a specialty tissue. It is the operating environment for life itself.
That is why I believe understanding EZ water changes the way we think about almost every aspect of health.
Because once you understand the water, you begin to understand the cell.
And once you understand the cell, you begin to understand the body.
How EZ Water Stores Energy
One of the reasons I find EZ water so fascinating is that it completely changes how we think about energy.
Most of us were taught that our energy comes from food. We eat carbohydrates, fats, and proteins, convert them into ATP, and that is supposedly the end of the story. Food is certainly an important source of energy, but it is far from the only one. As researchers have continued studying EZ water, it has become increasingly clear that the water inside our bodies is doing much more than simply keeping us hydrated.
It is storing energy.
As liquid water organizes into EZ water, something remarkable happens. The structured water develops a negative electrical charge, while a layer of positively charged protons forms immediately beside it. Whenever opposite charges become separated like this, an electric potential is stored.
That might also sound familiar.
Every battery you've ever used works because positive and negative charges have been separated. That separation creates potential energy that can later be put to work.
Your body is doing something surprisingly similar.
Rather than storing electrical energy inside lithium cells or alkaline batteries, your tissues are constantly building and maintaining regions of charged water. The larger and healthier those structured water layers become, the greater the potential to store and distribute energy throughout the body.
Once you begin looking at the body this way, the questions naturally change. Instead of asking only whether you are drinking enough water, you start wondering whether your body is actually organizing that water into the form your cells need. Is your internal water network healthy? Is it capable of storing energy efficiently? Or has it gradually lost its structure because it is no longer receiving the environmental signals that help build it?
Those are very different questions, and I believe they move us much closer to understanding why so many people struggle with low energy despite eating well and taking countless supplements.
Building Your EZ Water
If EZ water stores energy, the obvious next question becomes:
How do we build more of it?
This is where our modern understanding of hydration begins to shift.
Most people assume the answer is simply to drink more water. Drinking enough water is certainly important, but hydration is about much more than volume. Your cells do not simply need water. They need organized water.
One of the most powerful ways your body creates that organization is through infrared light.
Infrared wavelengths make up roughly 40% of sunlight and are present from sunrise until sunset. When these wavelengths interact with water surrounding proteins, collagen, cell membranes, and other hydrophilic surfaces, the exclusion zone expands. As it grows, it is able to separate more charge and store more potential energy.
In other words, sunlight is not simply warming your skin.
It is helping organize the water throughout your body.
As I began learning about EZ water, I found it fascinating that many of the health practices with the strongest track records also happen to be practices that support structured water. That overlap is difficult to ignore.
Some of the most effective ways to support healthy EZ water include:
- Spending regular time outdoors in natural sunlight.
- Using a sauna or other forms of therapeutic heat.
- Exercising consistently, which generates infrared energy within the body while improving circulation and mitochondrial function.
- Incorporating appropriate cold exposure.
- Grounding to the earth.
- Eating a nutrient-dense, mineral-rich diet that supports healthy cellular function.
Notice what is missing from that list.
None of those strategies involve buying a special kind of water.
That is one of the biggest misconceptions surrounding EZ water. While many products are marketed as "structured water," your body already knows how to create it. The goal is not to purchase structured water. The goal is to create an internal environment where your body can build and maintain it naturally.
Seeing Health Through a Different Lens
One of the reasons I continue to return to EZ water in my teaching is that it provides a completely different framework for understanding health.
Traditionally, biology has been taught by separating the body into systems. We learn about the nervous system, digestive system, endocrine system, cardiovascular system, and immune system as though they are operating independently. While that organization makes anatomy easier to study, it can sometimes obscure the fact that every one of those systems depends on the same cellular environment.
That environment is largely water.
Structured water surrounds your proteins, your enzymes, your receptors, your DNA, your mitochondria, your connective tissue, and every cell membrane in your body. It is not simply filling empty space between those structures. It is actively influencing how they function.
Dr. Gilbert Ling spent decades challenging conventional ideas about cell physiology by proposing that the structured water surrounding proteins is just as important as the proteins themselves. I have always found that idea incredibly compelling because it reminds us that biology cannot be understood simply by studying individual molecules in isolation.
A fish cannot survive without healthy water, regardless of how healthy the fish itself may be.
Likewise, proteins, enzymes, receptors, and mitochondria all depend on the environment surrounding them. If that environment begins losing its organization, it becomes increasingly difficult for those molecules to perform their jobs efficiently.
To me, that is what makes EZ water such a foundational concept.
It is not simply another interesting topic within health.
It provides a framework for understanding how the body stores energy, organizes information, facilitates communication, and creates the conditions necessary for life itself.
What Happens When You Have Too Little EZ Water?
One of the questions I am asked most often is whether low EZ water causes disease.
I think that is the wrong question.
Health is rarely explained by a single factor, and I do not believe EZ water is the sole cause of every condition. However, I do believe it provides an important lens through which many chronic health problems begin to make more sense.
Think back to something we discussed earlier.
Virtually every biological process takes place in water. Every protein, every enzyme, every receptor, every strand of DNA, every mitochondrion exists within this structured aqueous environment. If that environment begins losing its organization, it becomes much more difficult for cells to communicate, produce energy, and carry out the countless reactions required to keep us healthy.
In other words, when the water changes, everything built upon that water changes too.
Researchers have observed altered EZ water in a number of chronic disease states, including cancer, cardiovascular disease, and chronic inflammation. While this is still an evolving field of research, I believe it points us toward something incredibly important: restoring health may not simply be about changing biochemistry. It may also involve restoring the environment in which that biochemistry takes place.
That perspective has profoundly changed the questions I ask when thinking about health.
Instead of asking only what nutrient is missing or which pathway is malfunctioning, I often ask, "What has happened to the environment surrounding those cells?"
Because sometimes improving the environment allows the biology to work the way it was designed to.
EZ Water Connects So Many Pieces of the Puzzle
One of the reasons EZ water has become such a central concept in my teaching is because it helps explain why so many seemingly unrelated therapies often produce similar results.
Why does sunlight improve health?
Why do people often feel better after spending time in nature?
Why can sauna therapy be so powerful?
Why does regular movement benefit nearly every organ system?
Why do grounding, cold exposure, healthy sleep, and mitochondrial support keep coming up in conversations about health?
For years, these interventions were often discussed independently, as though each worked through a completely different mechanism.
EZ water offers another way to look at them.
Although each of these practices influences the body differently, many also help support the structure, charge, or function of the body's internal water. They are not simply affecting one organ or one hormone. They are helping improve the environment that every cell depends upon.
That does not mean every health intervention works by changing EZ water.
But it does suggest that structured water may be one of the common threads connecting many of the lifestyle practices that consistently improve human health.
To me, that is an incredibly exciting idea.
It reminds us that our bodies were not designed to function in isolation from the natural world. They evolved in constant relationship with sunlight, temperature, movement, gravity, the Earth's surface, and countless environmental signals that modern life often minimizes or replaces.
A New Way to Think About Hydration
Perhaps the biggest takeaway from everything we have discussed is that hydration is far more than a numbers game.
For years, we have been told to focus almost exclusively on how many ounces of water we drink each day. While adequate water intake certainly matters, I do not think it tells the whole story.
You can drink plenty of water and still fail to create the structured water your cells rely on.
Conversely, you can support hydration by improving your body's ability to organize and energize the water already inside you.
That shift in perspective changes what hydration means.
It is no longer simply about replacing fluids.
It is about supporting the biological processes that allow water to become useful.
When I think about hydration today, I think less about the size of someone's water bottle and more about whether they are giving their body the signals it evolved to receive.
Are they spending time outside?
Are they seeing natural sunlight every day?
Are they keeping properly hydrated?
Are they moving regularly?
Are they mitigating environmental stressors such as nnEMFs?
Are they regularly grounded?
Are they supporting healthy mitochondrial function?
Are they exposing themselves to therapeutic heat when appropriate?
Those questions often tell me much more than asking how many glasses of water someone drinks each day.
The Future of Hydration Is About More Than Water
I believe we are only beginning to appreciate the significance of EZ water.
The more researchers study this remarkable fourth phase of water, the more it challenges long-held assumptions about how the body works. Water is no longer viewed as simply the background in which biology happens. It is increasingly being recognized as an active participant in how cells communicate, organize themselves, store energy, and maintain health.
That does not mean every question has been answered.
Like any emerging area of science, there is still much to learn. But the evidence already available has dramatically changed the way I think about hydration, energy, and human physiology.
If there is one thing I hope you take away from this article, it is this:
The goal is not simply to drink more water.
The goal is to create the conditions that enable your body to naturally build healthy, structured water.
When you spend time outdoors, seek natural sunlight, move your body, prioritize healthy mitochondria, and live more closely aligned with the environment your biology evolved in, you are doing much more than checking healthy habits off a list.
You are supporting one of the most fundamental substances in your body.
And because nearly every biological process depends on that water, the effects have the potential to ripple throughout every system.
To me, that is what makes EZ water one of the most exciting and important concepts in modern health.
It reminds us that sometimes the biggest breakthroughs do not come from discovering something entirely new.
Sometimes they come from looking at something as ordinary as water...and realizing it was extraordinary all along.

Is EZ water the same thing as alkaline water?No. EZ water is not a type of drinking water. Healthy mitochondria help create metabolic water while also producing the energy needed for cellular function. At the same time, mitochondria themselves are surrounded by EZ water, creating an environment that supports efficient energy production. The health of one influences the health of the other.
Can improving EZ water help with chronic health conditions?
Of course, I believe the answer is yes. Still, EZ water research is an exciting and rapidly growing field, but it is still developing. So rather than reading a single blog and then viewing EZ water as a wholesale treatment for any specific disease, it is more helpful to think of it as one of the foundational environments that supports healthy cellular function throughout the body.
