Digestion 102: How Chewing Saved My Stomach Acid

When I was struggling with the absolute worst of my digestive issues, intense stomach pain and severe bloating, I decided to do an honest, unfiltered assessment of my eating habits. (If you missed where this journey started, make sure to read Digestion 101: Digestion Starts Before the First Bite ). I sat down for a meal and started counting the exact number of times I actually chewed my food before getting the urge to swallow. 

My result? A measly 5 to 7 chews.

I was essentially swallowing massive, solid chunks of unchewed food into my stomach and wondering why my body was responding with intense pain, gas, and severe bloat. To make matters worse, my stomach acid production was already heavily impaired at the time. At my absolute lowest point, I needed to take 9 HCl capsules per meal just to feel like my body could physically break down and digest a serving of protein!

I committed to changing this habit entirely. I started intentionally chewing my food 30+ times per bite. Wouldn't you know it, almost immediately, my digestion got easier and easier. Of course, I was simultaneously prioritizing circadian light signaling and a calm eating routine, which gave my body the ultimate foundation.

Why Chewing is a Game Changer

Chewing is often treated as a boring, simple mechanical phase of eating, but physiologically it is one of the most powerful regulatory steps in your entire digestive cascade. The entire process is driven by complex neurochemical signaling.

  • The Brain Gut Signal: When you chew, sensitive mechanoreceptors in your teeth, jaw, and periodontal ligament send lightning fast signals through the trigeminal nerve directly to your brainstem. This activates a heavy parasympathetic output through your vagus nerve, which tells your body to ramp up salivary secretion, gastric acid release, and pancreatic enzyme readiness. In short, chewing tells the body, "A complex meal is coming, prepare the downstream systems right now."
  • Saliva Activation: Chewing thoroughly coats your food in a rich bath of saliva. Saliva is not just water; it is packed with salivary amylase (which begins breaking down carbohydrates right in your mouth), lingual lipase (which kickstarts fat digestion), mucins, electrolytes, and crucial antimicrobial compounds.
  • Metabolic Regulation & Blood Sugar: Slower, more thorough mastication has been shown to reduce post meal glucose spikes by slowing down gastric emptying and improving beneficial gut hormone signaling, specifically GLP 1 and GIP. It also naturally increases satiety hormones like leptin and CCK, beautifully improving your appetite regulation before your stomach even has a chance to feel uncomfortably full.

What the Clinical Proof Shows

Clinical studies looking at chewing speed show that simply chewing your food more thoroughly significantly increases the post-meal release of GLP-1 (the exact hormone modern metabolic weight-loss drugs try to mimic synthetically) and peptide YY. Your body naturally produces these metabolic signals to optimize blood sugar, balance metabolism, and tell your brain that you are safe, satisfied, and nourished.

  • The Power of Surface Area: Mechanically, chewing breaks food down into tiny particles. This drastically increases the total surface area available for your digestive juices. When food particles are smaller, it is much easier for your stomach acid and downstream enzymes to break them down completely, allowing your body to easily absorb and use the nutrients.
  • The Cost of Rushing: On the flip side, swallowing your food whole forces the rest of your gastrointestinal system to severely overcompensate. It places an immense, unnatural digestive burden on your stomach, pancreas, and gallbladder.

In fact, research directly links poor chewing habits to malnutrition, gut dysbiosis (microbiome imbalances), and common gastrointestinal disorders. This means that many cases of chronic bloating, acid reflux, or low stomach acid may be triggered—at least in part—by rushing through the oral step upstream.

The bottom line? Chewing is a completely free, highly effective way to ensure the food you buy and consume actually gets broken down, absorbed, and used to truly nourish you.

The Digestive Assembly Line: Connecting the Dots

This is the perfect place to pause for a quick teaching moment and connect the dots back to what we established in Part 1. Remember, we are mapping out the three phases of Upper Digestion: the cephalic phase (brain), chewing (mouth), and stomach acid (stomach).

Think of your digestive tract as a beautifully timed assembly line. If the first worker on the line slacks off, every single person down the line gets overwhelmed, the system jams, and production completely breaks down. That "jam" at the end of the line is the exact bloating, gas, and pain you feel hours after eating.

When you rush through your meals and swallow your food almost whole, you are forcing your downstream organs to do a job they were never anatomically designed to do. Your stomach does not have teeth. Your small intestine cannot chew.

This also ties right back to our discussion in Part 1 about "soulless" vs. living food. Modern, pre packaged, hyper processed foods are structurally engineered to be incredibly soft and swallowed almost instantly. They require virtually zero oral processing. By sliding down so quickly, they completely skip this critical chewing step, leaving your stomach completely unprepared for what just hit it.
